• alittle more then a pound of ground turkey
  • 2 tbl sugar
  • 2 tbl brown sugar
  • pinch or couple grinds of fresh pepper
  • 1 tsp salt
  • 1 tsp 5 spice powder
  • 1 8oz can of chopped water chestnuts
  • 1/4 cup hoisin sauce + more for serving

sometimes life gets chaotic. i possibly wasn’t to ready for it.

kids get bigger. activities get bigger. ideas get bigger. life just seems huge sometimes.

and with all this stuff getting “bigger” time starts to disappear on me. time. where does it go?

sometimes things get so big food takes a back seat. it’s a quick phone call and before you know it pizza is delivered to your front door. it’s kind of easy to get the hang of picking up that phone and making things happen. i get into that groove every so often…but then something happens and i realize my inner urge to cook, to create, to feed my family.

whether you make this because you only have 10 minutes to make dinner or just because, this quickie will guarantee a happy table and really good lunch the next day.

school seems to have started everywhere (except for my youngest who still has a 2 week wait) and the chaos should soon turn into routine. until then…i plan quick dinners and forgive my self for those phone calls.

turkey lettuce wraps

this is an easy one to prepare while the kiddies are eating breakfast. fast to prep, easy to cook. replace the lettuce with tortillas and make roll ups if your kids aren’t into the greens.

  1. mix chopped turkey meat with sugar, brown sugar, fresh pepper, salt, 5 spice powder and chopped water chestnuts. use your hands, it makes “it” happen quicker. let sit for a couple hours in the fridge.
  2. heat up a skillet and brown your meat, when the meat is almost done, add 1/4 cup hoisin.
  3. spoon over lettuce or tortillas, top with more hoisin sauce and green onions. enjoy.
