• 1 can of rotel (if you can't find rotel, another can of diced tomatoes will be fine)
  • 1 14oz can of diced tomatoes
  • 1/2 cup cilantro leaves
  • 3 cloves of garlic
  • juice of 1 lime
  • 1 jalapeno, seeds or no seeds, your call
  • 1 tsp taco seasoning

this recipe is the beginning of two recipes to come. another crock pot recipe (chili) and a great idea for a brunch.

i love salsa. we go through bottles of salsa here like we do apple juice during the winter months.  during the summer when tomatoes are in season and i have all my fresh herbs in full bloom, it becomes a staple at every bbq and family meal.

so what about winter? i live in ny, tomatoes aren’t as good and fresh herbs can be hard to find. well, good ones at least. what about canned tomatoes? i would of never have thought. i am all about fresh veg and herbs, how much they taste better etc, but let me tell you, i think i finally figured out a recipe that will get us through all these cold winter months when my garden is not growing and we are craving chips and salsa.

this salsa is super easy, all you need is a food processor and some canned tomatoes.

  1. this is a recipe where my hand blender comes into use, of course you can use a food processor too.
  2. in a bowl or cup or in your processor, add all your ingredients and pulse to it reaches a consistency you and your family like.
  3. taste it, add salt and pepper, some more heat if your prefer. we have been making this non stop for a couple weeks now, depending on our mood, we will use more lime, or even more garlic.
