• 32 oz box of veg stock and 16oz of water
  • 1 onion
  • 1 shallot
  • 3 cloves garlic
  • 3 stalks celery
  • 6 carrots
  • 1 small sweet potato
  • 1 tsp of turmeric
  • 1/2 tsp of mild curry
  • 1/2 tsp cumin
  • 1/2 cup red lentils
  • 1/2 cup honey
  • 3 sprigs parsley
  • 2 sprigs of thyme
  • 1 cinnamon stick
  • salt and pepper to taste

i love soup, can you tell? i had my family over the other night and decided to try out another crock pot recipe.

this is something i would normally cook on the stove top but i was in and out all day and that wasn’t going to happen (i have a dog that really likes my cooking). so, at the crack of dawn (ok, it was really 8 ) when my kid’s woke me up i started to get my soup together.

i started taking out ingredients i thought would be good together. when i make ginger carrot soup i very rarely add curry, this time i was in the mood. sometimes i crave curry. so i took out some of my other indian spices like turmeric and cumin and got busy.

this soup was great, it had a really earthy and natural taste. it was refreshing and tasted great with some fresh bread.  it was vegetarian and diary free. i added red lentils for some extra protein as well as a sweet potato which also helps the soup have a creamy texture without the addition of cream or milk.

{crock pot} curried carrot ginger soup

  1. in your crock pot, add stock and water (i like to fill up the empty box halfway with water, about 16oz) and put your crock pot on high).
  2. chop up all your veg and add to stock as well as spices. i like to take the parsley, thyme and  cinnamon stick and tie them together with twine, you can just lay them at the top of the pot.
  3. when the soup came to a low simmer, after about a half an hour, i put it on low and left the house for the day. 6-8 hours.

when i came home my house smelled amazing. i took my hand blender and right in the crock pot blended the soup and then added the honey. mix it around and give it a taste. depending on the veg sometimes i have to add more salt then others. when i make this during the summer vegetables are sweeter and have more flavor i therefor add less salt or pepper.

everyone really enjoyed this, the kids even loved it. not only did j sample it before everyone got there a couple times, p, who is turning into a really picky eater went to town. we had some fresh bread and i served it with some turkey and roast beef. it was a great meal, i was even asked to pack up leftovers :-)
