hey there…

it’s been a while…

sorry.

there has been a lot going on here. a mixture of back to school happenings, family craziness and then me getting sick. it’s been weeks of exhaustion, not being able to motivate, not being able to get off the couch.

it’s been hard i won’t lie. but i’m feeling ok and hopefully with the help of my awesome acupuncturist and my totally cool new doctor things are finally looking up. yes i totally have an acupuncturist. i’m one of those people. don’t knock it until you try it (wink).

so you might notice some changes over the next couple weeks. my lack of posting for one. until i can kick this in the ass i might not be around as much. you also might notice a change in my recipes. lack of gluten and dairy. weird ingredients. linkage to some new blogs i’m finding that have been helping me overcome my fear of living the gluten free lifestyle.

oh, have i not mentioned here that i have been instructed to skip the dairy and the gluten? yeah. let’s leave that alone for today. until then, a recipe i have been trying to post for weeks.

it’s totally beef stew season. i mean come on, it’s like 40 degrees today. no joke. i have my fake fireplace on. i do.

so to keep warm, i like to slow cook things…when my oven/stove is on my house feels warmer. maybe it’s the smell of beer cooking or the browning of the beef. i don’t know, but before my diet changed and i rocked these hardcore antibiotics, i drank beer.

shock-top & dark apple balsamic beef stew

  • 1 tbl canola oil
  • 2 cloves garlic
  • 2 small or 1 large onion
  • 3 parsnips
  • 1 small turnip
  • 2 large carrots
  • 2 small sweet potatoes
  • 1 large potato
  • 1 pound stew beef
  • 1 12oz bottle of a belgian beer (i used shock-top)
  • 2 cups stock
  • 1/4 cup dark brown sugar
  • 2 tbl dark apple balsamic vinegar
  • 1 bay leaf
  • large handful of parsley
  • salt and pepper
  • cornstarch to thicken if needed (optional)
  1. heat up a medium to large stock pot and add 1 tbl canola oil. salt and pepper meat and brown on both sides, set meat aside.
  2. to pot add all of the vegetables and sauté for 5 minutes. add beer. let reduce for 2-3 minutes. add brown sugar, balsamic, parsley, bay leaf and meat to the pot, mix. add stock. salt and pepper.
  3. bring to a boil and then simmer for 4-5 hours.

if you like a thicker beef stew add the cornstarch. make a slurry first. take 4 tbl of the broth in the stew out and whisk with 1 tbl cornstarch. add back to pot and mix. sauce will thicken with in a couple minutes. bringing the temperature back up speeds this up.
