• i papaya chopped into bite sized pieces
  • 1 jalapeno pepper
  • 1 small red pepper
  • 3 ramps or scallions chopped
  • 2 tbl olive oil
  • 1 lemon juiced
  • pinch of salt and pepper
  • 2 tbl pineapple mint chopped
  • 1 tbl parsley chopped
  • 1 tbl cilantro

i now have mint growing everywhere. i do every summer. it’s one of my favorite herbs.

i add it to sun tea, i add it to water, i add it to salads, sometimes pasta and it looks nice in a bouquet of wild flowers (flowers in the summer always make me smile).

my favorite however is making a salsa. especially now that mint comes in many different varieties. i’m talking lemon, chocolate, pineapple…it’s out of control and so very easy to grow.

we grow our mint in pots. trust me, you don’t want to stick this stuff in the ground, well, unless you are a mint farmer because mint grows like a weed. i good smelling yummy tasting weed but really, like a weed.

my favorite right now, pineapple. i bought a tiny little plant weeks ago and threw it in a pot. it’s now quadrupled in size, forget it, it’s more then quadrupled (maybe i should of taken a picture). I have been adding it to iced tea…what flavor, but my favorite…this salsa.

it’s easy to throw together. you can serve it over grilled chicken, steak, fish. it’s versatile, it’s good, and man i can just eat this stuff all summer long (i plan too).

mint papaya salad

you can use regular mint for this dish, it tastes just as good.

  1. chop and cut all your ingredients and add then to a big bowl.
  2. mix.
  3. let sit for at least 20 minutes for all the flavors to come together.
