cooking = healing. at least to me.

it’s amazing how one day in the kitchen can revive me. make me feel whole, make me feel at peace.

the colors, the textures, the smells…it all helps. all makes me feel good. all makes me feel somewhat sane again.

the best part was that my little man turned 6. it felt like yesterday he was just 3. how time flies. how that little baby face tuned into a little man over night.

celebrations occur even in the middle of chaos. and sometimes you just need to stop and enjoy. smile, hug your loved ones and relax.

oh…and eat.

 pan seared salmon with tomato herb salsa

 what you need:

  • salmon
  • canola oil

for the salsa

  • 1 pint cherry tomatoes
  • 1 tbl fresh chopped parsley
  • 1 tbl chopped chives
  • pinch of salt
  • pinch of pepper
  • 2 tbl canola oil
  • 2 tbl champagne vinegar
  • 1 tbl sriracha
  1. pre-heat oven to 350. Get out a baking sheet and line with parchment paper.
  2. to sear salmon: heat up a frying pan and add 1 tsp canola oil. fish side down (skin on top), add salmon and sear to fish moves on it’s own and browns. place salmon (skin side down) on baking sheet (repeat if you have more salmon to sear). when finished searing salmon, bake at 350 for about 15 minutes.
  3. for salsa: chop and add all ingredients to a bowl, mix and serve on side or over salmon.
