• 1 avocado
  • 2 clove garlic
  • 1/2 lemon juiced
  • 1/2 cup 1% milk + a squirt of lemon juice
  • 1/4 cup water

what goes perfect with crab cakes?

anyone?

ok, well what about avocados? healthy alternative to those mayo filled dressings or dips that usually accompany a crab cake right? did i plug my recipe enough in the last sentence? just in case…crab cake.

this dressing not only is a wonderful accompaniment to a crab cake but also any salad. yeah, salad, see my obsession here…anything i can make with or for salad (by the way, a little shameless plugging, here is a great salad).

i found this recipe while fiddling around on my ipad. fiddling? actually i was enjoying some down time (yeah, i actually got some of that) and checking out the newest issue of whole living. whole living is one of my favorite magazines. um, just thought i would throw that out there.

my goal was to make the crab cake…i figured i would just just throw together a mayo based dressing with some lemons and call it a night…but this…this folks made my day. not to mention i have 2 avocados ready to kick it in my fruit bowl.

magazines always give me wonderful inspiration. what inspires you in the kitchen?

avocado dressing     adapted from whole living

note: to prep, measure out milk and add a squirt of lemon juice, put aside for 2-3 minutes while you prep and ready your other ingredients.

  1. to a food processor or blender add avocado, lemon, garlic and a 1/4 cup of water, blend just to incorporate the ingredients.
  2. add milk lemon mixture with a pinch of salt and some fresh pepper. blend, chop, grind, whatever you do, for about 20 seconds.
  3. open up the blender, taste, season, serve.

serve with crab cakes or salad, or both (insert big smile here).
